Mild in flavour and full of goodness, this simple slice is packed with vegetables, protein, and fibre - making it the perfect immune-boosting meal for busy families. It’s also incredibly versatile and holds up beautifully in lunchboxes, so you’ll get more than one meal out of it!
Why This Dish Supports Immunity
It may look humble, but this slice is bursting with ingredients that give little bodies the support they need to stay well:
- Zucchini – Rich in vitamin C and antioxidants to support the immune system and healthy skin
- Eggs – A great source of protein and B vitamins for cell growth and repair
- Corn & peas – Fibre-rich veggies that support gut health, which plays a key role in immunity
- Cheese – Full of calcium and zinc, which helps immune cells function properly
- Lean ham – A tasty protein source with iron and B12 to keep energy levels up

Kid-Approved Zucchini Slice
Serves: 4-6
Preparation time: 20 minutes
Cooking time: 30–40 minutes
Ingredients
Main ingredients
- 1 medium onion, finely chopped
- 500 g zucchini, grated (no need to peel)
- ½ cup frozen peas
- ½ cup frozen corn kernels
- ¾ cup reduced-fat cheese, grated
- ¾ cup wholemeal self-raising flour
- 6 large eggs, lightly beaten
- 125 g lean ham, chopped
Optional flavour boosters:
- A teaspoon of dried herbs like oregano or thyme
- 1 small grated carrot or sweet potato for extra sweetness
- A pinch of garlic powder or mild curry powder
- A spoonful of ricotta or feta for a creamier finish
- Swap ham for cooked bacon or shredded chicken for a flavour twist
Method
- Preheat your oven to 180°C (moderate).
- In a large bowl, combine all ingredients and mix well.
- Pour the mixture into a greased baking dish and level the top.
- Bake for 30–40 minutes, or until golden on top and firm in the centre.
- Allow to cool slightly before slicing. Serve warm with wholemeal bread or a fresh side salad.
Tip: This slice is just as tasty cold and stores well in the fridge - perfect for lunchboxes or quick snacks the next day!
